The Chalk Hill appellation gets its name from the "chalky" appearance of its volcanic, white ash soil. The unique soil married with a warmer than average climate for the region, yields Cabernet Sauvignon grapes of exceptional character.
The Vineyards Block 831 is a classic Chalk Hill Cabernet Sauvignon. Firm but elegant with plenty of ripe dark fruit wrapped around ample oak tannin; a wine which could easily age for a decade but specifically made to enjoy early--albeit with a little aeration.
